You would need to disable the immobiliser in your ECU which would then allow you to get rid of the clocks and still allow it to start.

You should be able to mate up just about any aftermarket stuff to it - I'd recommend that you get hold of the right connectors rather than hacking the originals so you can put it all back again in future with little fuss.

I think Kev (Skidlids) on here has put a 1098 dash onto one of his Monsters, so it really depends on the style of the clocks that you want and then have a play with getting them to fit!
