Servicing ?

Have had my 748 in a local bike workshop for several weeks now, after it started to play up.It turns out there was water in the tank, from where,I don't know, but also the thing had been mapped wrong when I put on after market cans. The filters look like they had never been changed in the four years that I've had the bike, yet they are listed on worksheets that you get after a service.Makes me wonder if we are really getting what we pay for.The said Ducati shop that carried out the services is now closed, but I'm more than happy to take it to Dave Hammonds in Dover, seeing as he used to run his own team,I feel he know's about bikes.Have you,or do you feel you have never got a good service ?
