My bit...
Clean Clean Clean Clean Clean Clean Clean Clean !!!!!
Wash all the fork parts out REALLY well, and when you think all the old oil and grime is out, keep cleaning. it takes a while to get all the old oil out, i stip them totally, wash all the parts through in the safety clean, then brake cleaner, then airline all the parts. Very time consuming but there is absolutely no point just pouring out the old oil and putting new on top, leaving all the old oil/gunk/grime in the working part of the forks at the bottom!
One of my 'things' that winds me up is when dealers/service centres just pour out the old oil and re-fill it. I've even known people to pump it out and top it up with the fork in the bike!!!!!! GRRRRRRRRRRRR
one of those jobs which is well worth taking your time, it may take a few hours but you either do it right or dont do it.
Good luck.
PS put new seals in while there out/apart. then you have a nicely service set of forks that'll last. And if they leak'd in 2000 miles you'll be kicking yourself.
