You could always do a Mottorad course. These are (3 day) bikes only course run mainly by the Germans for Germans, but they have 1 or 2 English instructors for the Brits.

I haven't done one, but my mate has and basically you get taught sections of the track at a time.

They are 'very' (800Euro's +) expensive but you get to stay in the Dorint Hotel at the Ring and ride the F1 GP track (10 laps I think)

If you are interested drop Neil Leigh an email info@aeaventures.com - he runs a B&B over the hill from Spa in belgium and is a top bloke and is one of the Mottorad instructors (I'm staying with him when I do SPA this May
