You can still pick up a reasonably tidy 851 for around £2500, which is pretty good value for money. You can get restricted mileage classic bike cover too, which will all help reduce costs.

As to investment potential, I can sort of see where you are coming from, but I'm with rcgbob on this one. So far as my bike is concerned she's not worth tuppence..............cos I'll never sell her.
