I had the same issue here - wanted to go for 180 but they only use 190's.
I have the 190 fitted on a 5.5 rim (rear) - it does give a steep edge, so when you are off the edge your toes are touching, but there is definately bags of grip - also noticed they tip in a bit quicker - even with the rideheight reset to previous
