Mood: walking on sunshine.....
My wife and I went cycling in Holland for two weeks over summer ages ago...brilliant, very flat, nice food, drink, people and coffee shops?

Fly to Amster, hire a bike with panniers and go...ride south to Mastricht and catch a train back.
