Yes you can, so long as you use a current limiting resistor on the +ve (anode) of the LED.
You would need to calculate the value of this resistor from the LED data (current drawn etc), however a good guide for a 12v installation is 1k ohms

LEDS- depends what you install, as there are different types, like Gallium, ultra brites, stand etc...the choice is huge.
