Did the same with my 800 last year .. And electrics scare me too
My advice .. be very careful
Be very patient with it .. disconect it and constantly check everything you want to work still works before cutting anything.
DO NOT CHOP BUNDLES OF WIRES .. YOU WILL STUFF UP
From memory.. all the obvious stuff lights and indicators where pretty straight forward, all the stuff in the tail was redundant .. but be extra careful with the cockpit electrics
And I seem to remember having to make a permanant connection between the wires for the sidestand cut out switch
