A friend of mine that used to work for Camping Gaz told me that as you cook when the charcoal is white not black & smokey the flavour comes from the burning fat and juices not the combustable fuel.

Having used both I would suggest that if you are cooking for less than ten I would go with charcoal, if its for a major party then gas is easiest.
