I've often seen people mention removing the speedo drive from the wheel of their track/race bike and put in a spacer instead - can anyone advise on where I can get a spacer or if its usually improvised, what have people used before?

its on a 2000 748bp if that matters. Assuming I can obtain said spacer do I also remove the dust seal and wheel mounted plate that mates with the speedo drive?

Cheers!

The dust seal remains and you remove the drive. I just made one up on the lathe. Not sure what others do?

A good tip for making spacers is to buy a bearing with the same internal and width measurements that you want - the outer size is not important - and then cut off the outer race to leave you with just the inner race, and a perfect spacer! You can pick bearings up for a couple of quid each, and you know they're made of the right material too.

I did this when removing the speedo drive on my 748 and fitting a TransLogic dash.
