Your favourite meal - give me ideas
 
This might sounds weird, but I am kinda getting a bit bored with food.

I am on ok cook and really enjoy cooking etc, but I am really getting fed up of the same sort of meals.

So what is your favourite meal?
Hopefully this will give me inspiration to conjure up something interesting :)

Apart from Roast (esp duck), I love:

salmon fettucine
salmon lattice bake with a broccoli sauce (a really good cheat one, if you use 'instant pastry') - can use any fish for it, but salmon best for me
chicken lasagne - with extra mushrooms

Just 3 ideas, will add more later Lily

Seriously, if you haven't already got it, get hold of a copy of Jamie Oliver's Happy Days book as it has some of the best recipes in it. Even though it's mostly traditional food (his toad in the hole with red onion and balsamic vinegar is superb) it's a really handy one to own....

Mushrooms fried in garlic sauce with sauted onions to start.

Fillet on Aberdeen Angus beef very rare with cream and green peppercorn and brandy sauce and swiss rosti potatoes for main,

For dessert - nothin cos I'm full with all the preceding!

If you wanna know how to cook the above, just ask!

Ok, my favourite is something I knock up with some prawns but you could add scallops and squid.

In fact I pretty much just make this up depending on how I feel so I'll just sort of give you some ingredients.

Prawns ( or squid .. whatever, I've done it with fish too)
Some stir fry vege's - not too many, keep it simple
Rice or noodles, whatever floats your boat
chilli - lots of it
garlic
ginger
coriander (put some in while you're stir frying but save some to mix through when you've finished/garnish)
a bit of ground black pepper
Fish sauce
Oyster sauce
a bit of Soy sauce
finish it off with a bit of lime juice, but only add after cooking - the lime juice will start cooking your prawns/seafood before it hits the wok and it could be tough

I'ts a thai style stir fry basically, but lots of really nice flavours that combine well.

Lily sorry about the seafood, its just that AK doesnt like it, so I suppose it makes it more yummy for me, as I only get to cook fish when he is out/away! :(

Take it you'd rather prefer something that runs, rather than swims?:lol:

starter - pan fried foie gras with toasted brioch
main - simple dover sole meniere with saute and mange tout
pudding - either meringue with mascapone and stewed summer fuirt coulis or tart tartin.

For posh nosh:

Starter:

Moules Farcie - Mussels stuffed with garlic, herbs and toasted bread crumbs and drizzled with olive oil

Main course:

Either

Magret de Canard with Gratin Dauphinoise and Mange Toutes or Salmon baked in a sea salt crust with butter sauce (you crack the sea salt crust away before serving and it's not overly salty at all - just delicious)

Dessert: None (except maybe creme brulee) more likely go for a really good selection of cheese

Wine: Ravenswood Mendocino County Zinfandel

For everyday, a really good quality Full English breakfast is one of my favourite meals of all time

for a starter try baked avocado with tabasco prawns

for a main course, chicken with baby carrots in Boursin sauce with Mange Tout is nice

and then I know a wicked toffee cheesecake recipe for dessert


Yum, but not all at the same meal time... I think I would puke !

One of my fave meals, and really simple, is a roasted duck thigh on a bed of rossti.
Definately créme brulée for pud!

And lily, if you can cook duck properly you can have my spare room rent free!!

mmmm, these are giving me some ideas...

none of it sounds particularly low cal though :(

as Freak always says to me just as I am about to eat anything interesting... "a moment on the lips...."

but even the suggestions of rosti etc, just make things a bit more exciting.

sadly its plain old curry for tea tonight, but maybe at the weekend I might get some motivation..

bit boring but.
a good old spag bol with tons of oragano and basill, lots and lots and some more tomato, at least 1/2 bottle of strong red slung in(the other half seems to disapear while cooking, half a ton a garlic,and dont forget the mince.i also find a bit of shredded celery and carott adds to the effect.
nice bit of home made garlic bread with yes you guessed it, tons of garlic
good spicy red to chase it down

a good spag boll needs to cook for as long as poss. if you can be botherd stand there stirring it at a decent heat for a couple of hours and keep topping up with red wine as it thickens, yourself an all

i find that if you buy lean mince(the expensive stuff) it ruins it.a good bit of fat on the meat helps the flavour along.

also i dont mind a nice bit of sirloin steak.
to get it just right i like to leave it out for a couple of hours before cooking to get up to room temp. get your pan/griddle smoking, just a tad of ground nut oil then give it a bout a minute a side.
served with chunky chips loads a peas bit of lightly fried onion and loads a big mushrooms
this always seems to deserve a nice bottle of red an all

now snack wise theres nothing like a nice bit of quality smoked salmon on real grain rustic brown bread with a genorouse smearing of real butter, a bit of course brown pepper on the butter and a tad of lemon juice on the salmon. smoked salmon has hardly any flavour cold so let it warm up to room temp before eating.
i like to accompany this with a nice scottish single malt(1 lump of ice).
after eating a cigar always seems to work well

god i'm hungray, i'm going down to the kitchen for a bowl of corn flakes;)

That sounds like indigestion to me:( somehow crisps and alcohol don't seem to mix well !

When I was a wee teenager I used to drink Diamond White ( errggh puke ) and eat Bacon Flips ( a cheap version of Frazzles ) and i would end up with raging acid stomach !:(:(

Have a look for a recipe for Kidney Tobago.
My mum used to knock it up for us when I was a nipper.
Tried it myself but its never the same, especially when you liberally add Chorizo sausage and Jalapeno peppers to taste.

For an everyday quick fix lunch I like to have pie and peas in a giant yorkshire pub with brown sauce or a bit of mint sauce.

Fresh tuna steak grilled slowly using extra virgin olive oil, at the same time stir fry large spanish onion and couple of sliced garlic cloves in wok. Whilst this is cooking have large pan of water with fresh garlic and herb tagliatelli simmering. Heat a cheese sause in the wok with the onion and garlic, fold in the tuna-flaked, and then the drain and fold in the pasta. Serve immediately with garlic bread and any wine that you like-I personally rather like a nice chablis.
And yes Lily you could use chicken, but I prefer tuna.

As I tend to do a fair bit of hunting (not foxes) shooting and fishing I like to use what I've caught or shot. Have some great recipes for rabbit, one of my favourites is rabbit in whole grain mustard sauce with rosemary. Rabbit is low in fat and very tasty, used to be a regular part of the diet of country people but the supermarket and our modern lifestyles have seen it decline in popularity. Also worth a try and very quick to cook is stir fry with sliced pigeon breasts, the meat is dark and very rich. Another favourite is a barbecued trout steak from a big rainbow, you can't buy these easilly, you have to get out there and catch them they are classed as oily fish containing the sort of fats which are supposedly good for you. I would far rather eat things I know are fresh than buy a load of polluted meat from the supermarket.

Mind those tuna dishes !!!, they may look and taste good but tuna and other big game fish retain a high level of heavy metal (mercury) pollution in their systems, I no longer eat tuna for that reason.

Although lots of them sounded great, they were mostly fish/seafood and we don't eat either, so kinda difficult to do.

I have a few ideas and once i know what i am doing for work etc will be able to plan food a bit better.

I can say for sure though that under no circumstances will i be having rabbit :( :(

Last time my mum sneaked me rabbit i went veggie for about 8 years!
