Fork oil 800 ss
I'm replacing the fork seals and was wondering how much oil I put in to get a 115 air gap or do I just measure from the fork top without spring in

I would just measure it, if you have a fork oil level tool with the syringe its easy enough.
Assuming they are standard Supersport 1000DS forks standard oil amount would be 532cc, but not sure what air gap that relates to
