Optimum gearing for a 996

I need to change the chain and sprockets on my 996s which has about 120 rwhp after Sigma performance did some work on it. At the moment I have a 14t front sprocket and the standard 38t rear. Should I keep a 14t front and go up to a 39 rear or maybe even a 40t rear? What's the general view on this? Obviously the 996 is overgeared as standard so what is the optimum gearing for fast twisty road, track riding and balistic wheelies whilst still maintaining an acceptable top speed and reasonable touring ability? I often ride it to France and this is my only road bike so I still want it to be acceptable "real world" roadbike.
