Regarding the mods.
You can fit whatever fairing you like. You can currently see the full range on a grid near you. Varies from Numbered barn door, to MH lookielikie, 916 types, carbon reps and so on.
regarding 620 valve sizes - ducati list same part number for all 620 valves, ie., they would appear to be the same size regardless of year.
personal view (having raced a 5 speed 620SS) is that the 6 speed box doesn't make any difference. However the Ducati slipper clutch (which I believe also locks up under load) might remove clutch judder and give faster starts (ask Dom after this weekend - two blinding starts).

Actually, I got clutch judder too.
I get it on Louigi's bike and the 748's I've raced this year. Must be an inherant issue.
I had a 2003 620Sie. It had 5 speed (that was standard on 620s at the time). The seat was higher and you could adjust the suspension more and it had twin front discs. Only the dark had 1 disk and I think you could even have that with 2. The S also had more carbon fibre than standard. Same engine though and no slipper clutch.
