You should be able to get a Certificate of Conformity (COC) direct from Ducati as this is an EU model, and these should be made available (free of charge) when required.
This will cover lots of details, mostly the same as those on the V5, but will also include the date of manufacture.
The COC is a DVLA recognised document, as they don't like emails and stuff like that when trying to prove details.

info@ducati.com as this goes through to Italy directly (avoid Ducati UK as they won't be any help!) requesting the COC with your VIN number.
It might be useful to include a copy (photos) of any documentation you already have which shows the VIN on it to prove ownership.
