| The OEM oil temp gauges are notorious for being inaccurate. I wouldn't worry about it until the oil light on the dash lights up (even then, it may be a bad oil pressure sensor).
Just make sure the oil temp gauge reads in a certain range for your bike (it may vary with other SS bikes). Remember, in the early days, there was no oil temp and NO ONE worried about it, they are air/oil cooled bikes after all.
