Despite the best efforts of your themostat and cooling sysytem, your running temperature will depend to some extent on ambient temperature. I have just ridden the 3,000 km from Istanbul to the UK in 2 days and the running temperatures I was seeing were:

Turkey ( early morning: cool ambient c 22 degress C) - just under 80 degrees C
Greece (ambient temp c 36 degrees C ) - just over 80 degrees C

Italy (high ambients of c 40 degrees c) - about 90-92 degress C

France & Swizerland ( cooler ambient temps) - c 75-80 degrees C

All at similar high speeds.

As soon as I stopped for any resaon the temp soon headed for 100 degrees C but then cooled down as soon as I started to move off again. These are not good bikes in heavy stop-start traffıc !
