You pays yer money and yer makes yer choice. I can't see the point of buying an S then adding the carbon and Ohlins. With an R you should also get the termis and the ECU for them. The extras you get included make the R better value in my opinion. An S is still a great bike but adding only a few bits of Carbon, Ohlins and termis and you are way above used R money. There may still be a few odd ( yellow?) new 998s in the dealers. I seem to recall seeing one advertised recently.
A Used R will be £10,750 upwards and used S perhaps £10k upwards?? Not a big difference.
If you do got for the R make sure you get the termis, std cans and ECU with it. Should also be a paddock stand of sorts and a cover.
Check out the service history, if there is one due or overdue you need to budget £400 plus for that as well,
