Do they check the engine and frame numbers? (I haven't stolen anything, just having a thought about my 2 bikes...)
Do they check if my speedo is in mph?
Do they check if my headlight is a continental or UK one?

They do check the engine and frame numbers (according to an article in this month's Bike mag). Don't know about the rest. This website might help though:

Yes but i can lend you one just for this if you want as the froggy one will have the wrong beam direction

MY 851 is an import ( Yes I know they are all imports - you chaps know perfectly well what I mean ) and dips the wrong way. My MOT tester passes it with ( red ) insulating tape on the glass to make it dip the right way. Saves buying a new one.

Might be worth asking your tester if that's o.k. with him before you put it in for the test.
