suspension, snow and services

Had a good quick run on the bike today in the falling snow after the big service from cornerspeed (thanks neil). One of the things I asked him to do was reset the suspension to factory.
I think the combination of freezing temperature, cold tyres, stock settings and fresh oil made the suspension feel *VERY* hard. I think I'll leave it like that for the mallery session at the end of this week but I'd really like to soften it up for road riding - its very tiring being jolted up and down continuously in the cold... Leicester's roads have lots of pot holes and repairs, making them lumpier than a freshly ploughed field.
I got a fat 17st ass - anyone got any recommendations to get me started? (apart from lose weight )
I understand theres 3 dials/screws/nuts on the front and 3 on the back on a 2000 ST2, and I have no idea what they do -- thats about as far as my knowledge goes
I ride pretty hard (for an ST2), usually solo.

Suggestions please!!
