£500 !! I would be looking at lighter wheels,as Shazaam says 2nd hand mags or if you have the 3 spokes a upgrade to the 5 spokes will save some weight, get some money back on the old wheels.
Also worth considering are adjustable rearsets, can add a bit of comfort and also look good (unless they are like my Harris ones and plastered in dirt all the time)
Get your front internals sorted, I know you say they are done but I can trail my brake right into the apex if I have to on my revalved and resprung forks (having to refers mainly to race meetings).
Brembo Radial mastercylinder is a nice upgrade as is lower gearing and a Renthal or Talon rear sprocket carrier.
If you don't fancy a slipper clutch then a lightweight race clutch will help the engine spin up quicker.

Sorry to hear your not doing the Desmo Due, but hopefully there will be next year.
