The thin brown body gaskets do get a bit crushed out of shape but providing they are intact should be Ok.

I think its more important to be careful with the rubber type diphragms under the rounded top of the carbs that can be easily damaged.

Erm...other bits to look for:
The main slide, should do just that, slide smoothly in the bore.
The big needle should have a smooth profile and a sharp tip.
No blockages in any jets.
The plastic float assembly should all move easily - be careful around here as well.

I think I still have an unused stage 1 Dynojet kit laying around somewhere if its of any use
