Dave, the old gaskets should be fine, providing they are in one piece.
An old trick I was taught was to gently rub LM Grease on/into them. This'll soak in to the paper and make it more pliable again. It'll help it seal correctly as well.
Iconic has covered all the main points to watch out for.
Check also that the floats aren't puntured and above all, keep everything spotlessly clean...........
