You'd probably be better raising the rear rather than to push the forks up through the yokes for a couple of reasons. Firstly, dropping the front is going to give you less ground clearance (albeit marginally) and secondly raising the rear is going to raise the centre of gravity helping the bike tip into corners easier.
My 748r has a 120/70 front and the advice I got from JHP recently was 4 rings showing above top yoke for the forks and set the rear ride height at 246mm with a static sag of 8-10mm. Easy to do if you have or have access to a factory ride height tool. JHP also manufacture a perfect copy of the tool for a lot less than the OEM part. If you don't have the tool maybe somebody else on here could give you a measurement from some other reference point on the subframe or whatever.
As for the tyres, I doubt if you'll get the 208GPs hot enough on the road to really work. Try a set of Pirelli Diablos (standard compound), simply awesome! They're bl**dy good on track too!
