An update on this topic...

Took my bike for a spin today over the hills of Weardale, and measured its fuel consumption. Topped up the tank and re-set the trip meter. Topped up again after covering 106 miles, and it took exactly 8.3 litres. This means it averaged 12.77 miles per litre (4.5 litres = approx. 1 gal?) - so it returned around. 57mpg. Allowing for the optimism of the speedo (and therefore the recorded mileage) I'd say that it was still an average of over 50mpg.

It was a fairly gentle bimble, I'll admit, but I still passed 90% of the traffic on the roads. 60 mpg must surely be within reach of a 750ss?
