Thanks for the replies everyone, they've been really helpful.
Looks like "FIM chip" is going to be added to the ever expanding "To Do" list then....

Are they 'plug and play', or do they need to be set up by a professional? My ex-996S came with an FIM already installed, so I don't know anything about the fitting process.
Just plug in and play, i would say they are 95% ready to go, you can set them up on a dyno if you want it spot on. Moto Rapido can do this for you. Its just an eprom, remove old one and fit new one, make sure its in the right way around, there is a cutout on one side, just change it like for like.

The same seller also has a chip for "748R 50mm race cans", so subject to clarification that this is suitable for a 50mm half-system, as it's a lot cheaper than a FIM chip, I may give it a go.
After exchanging emails with Neil from Cornerspeed, who informed me Ultimap have ceased trading and that he can't get hold of them, I've just managed to buy one of the last remaining Ultimap chips from Sigma.
soory for the hijack but i have a Ultimap chip for sale, brand new never opened, originally for a 748sp but i believe can be flashed to suit any bike?? i maybe wrong,
