| Yes there should have been a dished plate in your clutch, you say the plates were blue so maybe the dished one got hot enough to flatten out.
Not sure if the 999 Clutch differs from earlier ones, but on the NON Slipper clutch Ducati usually start with Two of the 2mm FLAT steel plates at the back of the clutch followed by a friction plate and then the dished steel plate
