The only issue with changing to stainless bolts is that stainless does not have the tensile strength of the original bolts. Best option is to change to titanium.

The way to do it is to buy a replacement reverse shift pedal from Ducati. It fits directly onto the splines with no linkage.

Part number is 966056AAA.
