I'm not keen on the idea of spacers tbh, not that there's anything wrong with them, but does anyone know if they can be purchased "off the shelf" as it were?

I'm happy enough with the 2.5mm thick spacers on my Narrow track wheel as they leave enough of the centre boss protruding to locate the discs on. These are Guzzi disc spacers and fit the Corse Disc fitment.
Someone also makes 2.5mm spacers to fit the standard hub (64mm boss, 80mm PCD) as they are used on Aprilias when convertinf from Axial Caliper forks to Radial Caliper forks. You could double up on these but I choose not to as there's no centre boss left to locate the disc on, so I went for a set of 15mm offset discs of Khush
